Curried Macadamia Rice

This savory rice dish, featuring cauliflower and raisins, is perfect as a side or eaten as a light main dish. Curry blends beautifully with the flavor of Artisana Macadamia Butter.


  • 2/3 cups vegetable broth (or chicken broth)
  • 1/4 cup Artisana Macadamia Butter
  • 1-1/2 tablespoon curry powder
  • 1/2 cup raisins (or craisins)
  • 6 tablespoons butter
  • 1/2 cup onion, chopped
  • 1/4 cup cauliflower, chopped
  • 2/3 cups raw rice (for this recipe, fast-cooking rice is best)


  • grated ginger


Melt butter in skillet, add raw rice and onion to skillet and sauté for a few minutes, stirring well.

Add curry, broth and raisins. Cover and bring to boil. Reduce heat, simmer for 15 minutes and
add nut butter.

Stir well, cover and simmer another 5 minutes. Add grated ginger if desired.
