Mushroom Cashew Soup

Perfect for fall and winter evenings, this creamy soup is flavorful and warming with savory mushrooms and cashew butter.


  • 1 onion, chopped
  • 2-1/2 tablespoons extra virgin olive oil
  • 1/2 cup Artisana Organic Raw Cashew Butter
  • 1-1/4 cup water or veggie stock
  • 1-1/2 tablespoon soy sauce
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 2 cups mushrooms, chopped fine
  • 1/4 cup whole, cashew nuts


Heat half of the olive oil in a pan. Sauté one cup mushrooms & onion until tender.

Blend sautéed mix with cashew butter, water, soy sauce and cayenne pepper.

Heat remaining oil and sauté whole nuts and remaining 1 cup of mushrooms until tender.

Add to blended mixture; bring to a boil on low to med heat.

Simmer on low for 15 minutes, until hot. Serve.
